Banana-Blueberry Hotcake

Hello there, today’s post is all about one of my favorite brekky.

I workout in the morning and I make sure I get a good breakfast, otherwise, I won’t be able to make it through the entire routine.

I usually take oatmeal or muesli with fruits, some yogurt and a strong Italian coffee. But sometimes, I treat myself with my favorite hotcake (or pancake), mixed with other goodies.

In our country, by the way, we say hotcakes more than pancakes but please don’t ask me why. 😝

This is my first time to make a food recipe/cooking how-to, so please bear with me. I also tried to make a short video clip all by myself, so be ready to see the “struggle” with holding the phone in one hand while doing the “cooking demo” using the other. 😆

This very easy recipe is perfect for breakfast or snacks. Hope you’ll like it too.


250g Maya Hotcake Mix

1 medium-sized egg

1 tablespoon of olive oil

1/2 cup of greek yogurt

2 small, ripe bananas (sliced)

Handful of blueberries (fresh or dried)

Handful of chocolate chips


Pour the Maya hotcake mix in a bowl, add egg, olive oil, greek yogurt and mix altogether. Add the sliced bananas, blueberries, chocolate chips and mix some more until all ingredients are well-blended.

Prepare a hot pan that’s brushed with olive oil or butter, and pour your hotcake mixture. Wait until bubbles form on top, check the sides, and ready to flip to cook the other side.


Add a dollop of Nutella or maple syrup and serve with a warm cup of milk or coffee.
